Lush Apple Pancakes: 3 Win-Win Recipes and Helpful Tips

Apple pancakes with kefir

  • 2 eggs
  • 250 ml kefir (2.5% fat)
  • 160g flour
  • sugar 100g or less (to taste)
  • 1 tsp. baking powder
  • pinch of salt
  • 3 apples
  • sunflower oil for frying

Mix the dry ingredients (flour, baking powder, salt, sugar). After – beat the eggs and pour in the kefir. Mix with a whisk, but do not whip. The consistency of the dough should resemble a thick sour cream. Note that there should be no lumps.

Remove the skin of washed apples, grate them, and add to the batter.

Fry the apple fritters in the sunflower oil – about one minute on each side.

Apple pancakes with milk

  • 1 egg
  • 200 ml milk
  • flour 200g
  • sugar 1 tsp. or more (to taste)
  • 1 tsp. baking powder
  • pinch of salt
  • 1-2 apples
  • of sunflower oil for frying

Mix milk, eggs, sugar, and salt in a deep bowl. Next, add the flour and baking powder. Mix until smooth. Cut washed and peeled apples into small cubes or grate, and add to the batter. Fry apple fritters in a heated frying pan with sunflower oil until crispy.

Apple fritters with water – Lenten recipe

  • 250 ml water
  • flour 200-250 grams
  • sugar 3 tbsp. or less (to taste)
  • 1 tsp. yeast
  • pinch of salt
  • sunflower oil for frying

If you are out of dairy products (or if you are fasting) you can make apple pancakes without milk and kefir – with water.

To do this, mix warm water with sugar, add yeast, and a couple of tablespoons of flour. Leave the stew to rise in a warm place. Meanwhile, peel apples, and grate them.

When the stew has risen, add the remaining flour and apples. As you add the flour, watch the consistency of the dough – it should be thick, but pourable.

Fry the fritters in vegetable oil until tender.

On a side note: Tips for making apple fritters

Wondering how to cook apple fritters so that the dessert is not so harmful and caloric? Try baking them. In this form, apple pancakes are great for children. To do this, you can knead the dough according to one of the recipes you will find above. However, instead of grating the apples, cut them into medium-sized cubes and add a spoonful of sunflower oil directly into the batter. Cover a baking tray with baking paper and place the batter on it. Bake the apple fritters in an oven at 180 degrees until tender (about 15 minutes). It is not necessary to turn the pancakes in this case.

If you still cooked the treat in oil, after cooking, put the fritters on a napkin or paper towel. This will help get rid of excess oil.

And the secret of how to fry even fritters lies in how you should put the batter on the pan. Take one tablespoon at a time and make sure the portions don’t stick together on the pan – then you’ll get even, individual round pancakes.

To get puffy apple fritters rather than fruity cakes, do not whisk the batter too hard when kneading, and do not stir too much when scooping the batter for frying.
