Blueberry-Cinnamon Cream

Ingredients for 4 servings:

  • 100 ml milk
  • 100 ml cream
  • 1 stalk(s) cinnamon
  • 3 egg yolks
  • 2 tsp cornstarch
  • 100 g sugar
  • 300 g blueberries
  • 4 tbsp brown sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the milk, cream, and cinnamon stick in a saucepan and bring to a boil. Remove from the heat and let stand for about half an hour. Meanwhile, whisk together the egg yolks, cornstarch, and sugar. Once the mixture has rested, add it to the cream. Bring back to a boil and cook, stirring continuously, until the cream thickens. Remove the cinnamon stick from the cream. Trim and wash the blueberries and place them in a large bowl or divide them between 4 dessert glasses. Spoon the cinnamon cream over the blueberries and let cool. Once cooled, sprinkle the cream with brown sugar and caramelize it using a blowtorch.
