Blueberry dumplings

Ingredients for 4 servings:

  • 150 g flour
  • 200 ml milk
  • 250 g blueberries
  • 2 eggs
  • 50 g sugar
  • 1 tbsp butter per pan
  • Sugar for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg yolks with the sugar until foamy. Then add the milk and beat well again. Slowly add the flour and continue stirring, finally adding the blueberries. Beat the egg whites until stiff peaks form and fold into the batter. Melt the butter in a pan, scoop out small pieces of dough with a spoon and fry until golden brown. Place the blueberry dumplings on plates, sprinkle with a little more sugar, and serve.
