Onion chutney

Ingredients for 1 servings:

  • 400 g onion(s), red
  • 1 piece(s) ginger, approx. 30 g
  • 1 chili pepper(s), dried
  • 150 g brown sugar
  • 175 ml vinegar (sherry)
  • 1 tbsp mustard seeds
  • 1 pinch allspice, ground
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them into thin strips. Peel and finely chop the ginger. Roughly crumble the chili pepper. Melt the sugar in a heavy-bottomed saucepan and then caramelize until golden brown. Add the onions, ginger, and chili to the caramel. Pour in the vinegar and 100 ml water (careful, it will splash!). Stir everything well until the caramel has dissolved. Add the mustard seeds and allspice and simmer over medium heat for about 15 minutes. Season the chutney with salt and, while still hot, pour it into prepared jars with screw-top lids.
