Blueberry Mascarpone Dessert

Ingredients for 1 servings:

  • 200 g blueberries
  • 40 g sugar
  • 1 dashes lemon juice
  • 50 ml water
  • 200 g mascarpone
  • 300 g natural yogurt
  • Powdered sugar, as desired
  • 30 g chocolate cookies
  • whipped cream
  • 1 tbsp rum

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Bring the blueberries to a boil with sugar, lemon, and water and simmer for about 2 minutes, stirring frequently. The berries should be mushy (like a purée). Stir in the rum and let cool. Blend the mascarpone with the yogurt until smooth, sweeten with powdered sugar if desired. Roughly crumble the biscuits and stir in. Divide among dessert glasses. Pour the cooled berry purée over the cream, garnish with whipped cream and a few blueberries, and refrigerate.
