Blueberry pancakes

Ingredients for 4 servings:

  • 260 g spelt flour type 630
  • ½ tsp salt
  • 4 eggs
  • 30 g sugar
  • 90 g sour cream
  • 40 g butter, melted
  • 3 tsp, leveled baking powder
  • 150 ml milk
  • 300 g blueberries
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Combine all ingredients except the blueberries in a mixing bowl and mix with a hand mixer until a smooth batter forms. Wash the blueberries, pat them dry, and fold them in with a spoon. Fry the batter in batches in a pan with a little oil over medium heat until golden brown.
