Blueberry syrup

Ingredients for 1 servings:

  • 3 cup(s) blueberries
  • 3 cups sugar
  • 1 cup water
  • ¼ cup lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Basic recipe, great for pancakes, also possible with all other berries

Wash and dry the blueberries, then puree them in a blender. Simmer the blueberry puree with water and sugar on the stovetop for about 30 minutes, stirring regularly. Remove from the heat and stir in the lemon juice. Pour everything through a coffee filter and into a bottle or other container. The syrup will keep in the refrigerator for about six months. You can also make the syrup with frozen berries. Don’t thaw them separately, though; thaw them a little if the blender can’t do it otherwise. It doesn’t really matter what kind of cup you use; the main thing is to use the same cup for all the ingredients. I always use regular coffee cups (or large ones if the blueberries are growing particularly well).
