Ingredients for 4 servings:

  • 4 frankfurters
  • 3 eggs
  • 100 ml milk
  • 150 g flour
  • 100 ml mineral water
  • 1 tsp herbs de Provence
  • 50 g Parmesan, grated
  • some oil or butter for frying/baking
  • 2 eggs for breading
  • Breadcrumbs
  • some mustard, ketchup or spice paste of your choice

What’s special about my method is that I first fry or grill the sausages so they retain a lovely roasted flavor. So, fry the sausages. For the pancakes, mix all the ingredients together to form a smooth batter and fry 4 pancakes in batches in a pan with oil or butter. Now spread the pancakes with your chosen paste (I photographed this with mustard). Roll up a fried sausage tightly and carefully coat it with breadcrumbs. Fry in oil or butter until golden brown. You can slice them cold and serve them as finger food, or – if you have any leftover sausages – eat them the next day.
