Ingredients for 1 servings:
- 500 g flour
- 1 egg(s)
- 2 cl rum
- 125 g sugar
- 30 g hazelnuts, ground
- 1 lemon(s), untreated, grated peel
- ½ vanilla pod(s), including the pulp
- 1 pinch of salt
- 250 g butter
- 200 g apricot jam
- 30 g icing sugar for dusting

Knead the dough ingredients into a shortcrust pastry, cover, and let rest in the refrigerator for 90 minutes. Roll out the dough to a thickness of about 3 mm on a floured surface and cut out round cookies with a diameter of 6 cm. Cut out the same number of rings (edges about 1 cm wide). Place the cookies on a baking tray. Bake in an oven preheated to 180 °C (top/bottom heat) on the middle rack for 12 minutes. Carefully remove the cookies from the tray, spread with jam while they are still hot, and place the rings on top. After assembling the cookies, add a little more jam to the center of the ring and then dust with powdered sugar. Tip: will keep fresh for several weeks in a tightly sealed tin. This recipe makes about 60 cookies.
