Ingredients for 1 servings:

  • 6 eggs, separated
  • 350 g sugar
  • 200 g almonds
  • 250 g butter
  • 2 tsp sugar (lemon sugar)
  • 1 packet of vanilla sugar
  • 250 g flour
  • 1 jar apricot jam
  • 100 g almonds, chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Christmas cookies, makes about 50 pieces

Beat the egg whites until very stiff (10 minutes), gradually adding 150g of sugar. Fold in the almonds. Cream the butter with 200g of sugar and the egg yolks until light and fluffy. Add the lemon sugar, vanilla sugar, and flour, and mix everything into a smooth dough. Spread this dough onto a baking sheet lined with baking paper. Heat the jam, stir until smooth, and spread over the dough. Then pour the egg white mixture over the jam and sprinkle with chopped almonds. Bake in a preheated oven at 150°C for 50-60 minutes. After baking, immediately cut into 2 x 6cm pieces with a sharp knife and let them cool on a wire rack.
