Apple cake with almonds

Ingredients for 1 servings:

  • 5 sour apples (e.g. Boskop)
  • 1 lemon(s) , (juice)
  • 200 g margarine
  • 130 g sugar
  • 1 tbsp vanilla sugar
  • 3 eggs
  • 1 pinch of salt
  • 150 g flour
  • 2 tsp baking powder
  • 75 g ground almonds

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

for 1 springform pan 24cm, quick and easy

Peel the apples, halve them, and core them. Immediately drizzle each one with lemon juice to prevent them from browning. Combine the remaining ingredients to make a batter. Spread this batter into a greased and floured springform pan. Make several lengthwise cuts on the curved side of the apple halves (do not cut all the way through) and press them, this side up, into the batter. Bake the cake at 170°C on the bottom rack for about 50 minutes (use a skewer to test for browning). Cover with parchment paper after about 30 minutes to prevent it from overcooking.
