Bohemian beer goulash

Ingredients for 4 servings:

  • 500 g pork
  • 500 g beef
  • 1 pack of sauerkraut (optionally neutral wine sauerkraut)
  • 1 bottle of beer (Pilsner, if possible genuine Czech)
  • 1 cup breadcrumbs
  • 3 large onions, diced (not too finely)
  • ½ bay leaf
  • 6 peppercorns
  • ½ tbsp caraway seeds
  • lard
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dice the meat and sear it with the onions in the lard until crispy. Season with salt and pepper. Deglaze with the beer and add the spices. Sprinkle the breadcrumbs on top. Then spread the sauerkraut on top and let the whole thing simmer over low heat for about 1 hour. The sauerkraut should be just covered by the beer. Don’t stir in between! If you like more sauce, feel free to use 1/2 more bottle of beer. Tip: We put the spices in a tea strainer so you don’t have to search for them later. We usually serve it with boiled potatoes, but it’s also delicious with baguette or a roll.
