Bohemian dumplings grandma's way

Ingredients for 4 servings:

  • 250 ml milk
  • 42 g yeast
  • 1 tbsp sugar
  • 350 g flour
  • 2 eggs
  • 150 g semolina
  • 20 g salt
  • 4 rolls, stale
  • 50 g butter

Instructions

Working time approx. 20 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 5 minutes

Mix 4 tablespoons of slightly warmed milk with the yeast, sugar, and 4 tablespoons of flour and let it rise. Put the remaining flour in a bowl with the eggs, semolina, the remaining milk, and salt. Add the pre-dough and knead everything into a smooth, glossy dough. Let it rise in a warm place for 20-30 minutes. Cut the rolls into fine cubes, toast them in a pan, and knead them into the dough. Roll out the dough into a cylinder, let it rise again slightly, and place it in a cloth draped over the pot and over boiling water. Cover and remove after about 30 minutes. Slice the dumplings with kitchen string. Brown the butter in a pan and pour it over the dumpling slices.
