Bohemian potato dumplings

Ingredients for 8 servings:

  • 2 kg potatoes
  • 2 eggs
  • Salt
  • 350 g semolina
  • 450 g flour

Instructions

Working time approx. 1 hour 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 15 minutes

Peel the potatoes and boil them in salted water. While the potatoes are still hot, mash them with a potato ricer. Make a dough from the flour, semolina, salt, eggs, and potatoes. The dough should not stick to your hands. If necessary, add a little more flour. Form 4 dumplings from the dough and boil them in salted water for about 20-25 minutes. Slice the dumplings while they are still hot using a knife or a dumpling cutter and serve with roasts or various sauces.
