Ingredients for 1 servings:

  • e.g. celeriac
  • Water
  • Salt or wine vinegar
  • possibly oil
  • possibly pepper
  • possibly onion(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

and celery salad

Boil the trimmed celery stalks until they can be pierced with a wooden stick. Then peel and cut into not-too-thin slices. Place the slices in preserving jars and fill with salted water (1 tablespoon of salt per liter of water) and let cool. Top up again if necessary and reduce (at 100°C for 60 minutes). For salad: Use good, diluted white wine vinegar instead of the salted water. Reduce at 100°C for 15 minutes. Before serving, simply season with oil, vinegar, pepper, and onions.
