Boil zucchini – that’s how it works
You can pickle zucchini in a similar way to cucumbers. If you also cook the vegetables, they will keep longer. How to do it:
- Cleanliness is very important when preserving fruit and vegetables. Rinse or boil the mason jars and lids thoroughly first. Also wash the zucchini and cut out any bruises.
- Chop the vegetables into cubes or slices as desired. Then put it in a large bowl with some vinegar, salt, and sugar and mix everything together. Leave the mixture in a cool place overnight.
- Extra tip: To get even more flavor, you can also add peppers, onions, or some garlic to the zucchini before preserving it.
- Then distribute the prepared mixture over the preserving jars and fill them up with the brew.
- Now boil the well-closed jars for about ten minutes at 85 degrees. If you don’t have a special preserving pot, you can use a normal cooking pot. Bring the water to a boil and place the jars in the pot. Keep the lid closed while cooking.
- Immediately after preserving, let the jars cool down on a wire rack or cloth. This will prevent the courgettes from becoming mushy.
