Ingredients for 4 servings:

  • 100 g bacon
  • 1 onion(s)
  • 1 carrot(s)
  • 1 parsley root(s)
  • 1 stalk(s) celery
  • 300 g minced meat, mixed
  • 100 g Parma ham
  • 30 g porcini mushrooms, dried
  • 50 g butter
  • 125 ml meat broth (or instant vegetable broth)
  • 250 ml red wine
  • 1 cup of cream
  • 3 tbsp tomato paste
  • 1 bunch of parsley
  • some oregano, if desired
  • some thyme, to taste
  • some rosemary, if desired
  • some salt
  • some pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the bacon, vegetables, meat, and ham. Finely chop the soaked mushrooms. Fry the bacon in the butter until translucent, then briefly roast the vegetables. Now add the meat and ham, along with the mushrooms, spices, and tomato paste. Cook everything thoroughly. Deglaze with red wine and stock, cover, and simmer gently for about 45 minutes. Then add the cream and let it combine with the remaining sauce. Finally, season to taste with finely chopped parsley and freshly ground pepper. Serve with pasta and grated fresh Parmesan cheese.
