Bolognese sauce without meat

Ingredients for 4 servings:

  • 125 g soy – strips, fine
  • 400 ml vegetable stock
  • 400 g carrot(s)
  • 1 bunch of spring onions
  • 2 cans of tomatoes, chopped
  • 2 cloves garlic
  • rosemary
  • Thyme
  • basil
  • salt and pepper
  • possibly water
  • possibly crème fraîche
  • possibly mushrooms
  • possibly peas

Working time approx. 20 minutes; Total time approx. 20 minutes

Food combining protein

Bring the vegetable stock to a boil with the soy crumbs and let it simmer for 10 minutes. Meanwhile, clean the carrots, spring onions, and garlic and cut into thin slices or rings. First, add the tomato pieces to the minced meat and season lightly. Bring back to a boil and stir in the remaining ingredients. Simmer gently until the carrots are soft. Add a little water if necessary, but don’t let it become too runny. Taste and season again before serving. Add crème fraîche to taste. For those not on separate foods, serve with pasta or baguette; otherwise, serve with a nice green salad. Mushrooms and/or peas can also be added as a variation.
