Hearty vegetable quiche

Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter, cold
  • 2 tbsp water, cold
  • Butter for the mold
  • 1 vegetable onion(s)
  • 2 garlic cloves
  • 2 carrots
  • 200 g white cabbage
  • 2 tbsp oil
  • 1 tsp turmeric
  • 1 tsp coriander
  • ½ tsp cumin
  • 1 tsp salt
  • 1 pinch(s) of cayenne pepper
  • 100 ml vegetable stock
  • 100 g cheese, grated

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Grease a 26 cm tart pan and preheat the oven to 220°C. Mix the flour with the butter, add the water, and quickly mix it in. Roll out the dough and line the pan with it. Place a strip of aluminum foil around the edge of the pan to prevent it from sliding down. Pre-bake the base in the center of the oven for 10 minutes. Thinly slice the onion and garlic, peel and coarsely grate the carrots. Finely slice the white cabbage. Heat the oil in a pan and sauté the onion, garlic, carrots, and cabbage. Add the spices and stock, and cook for 5 minutes. Pour the mixture onto the pre-baked base in the pan, sprinkle with cheese, and bake in the oven for 15 minutes. Serve with yogurt, if desired.
