- 20 g fried onions
- 100 g breadcrumbs (toast crumbs)
- 140 g butter
- 2 tbsp tarragon, chopped

Toast crumbs are simply a type of breadcrumbs. Toast bread (quite crispy) and grind it in a blender. Dice the onion, cream the butter (use more if you want it a bit creamier) until light and fluffy, and mix with the herbs and onions. Then stir in the toast crumbs. Season with salt and pepper to taste. Spread on a fish fillet or, for example, a potato gratin and bake until done. Pre-bake the fish or potatoes for 20 minutes at 220°C, then for another 10 minutes at 120°C.
