Bouillon potatoes with meat dumplings

Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 1 bunch of soup vegetables
  • 250 g sausage meat (bratwurst meat)
  • 1,000 ml vegetable broth, possibly freshly cooked
  • 1 tbsp oil, neutral
  • salt and pepper
  • Parsley, to taste

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and cut into bite-sized pieces. Wash and dice the bunch of soup vegetables, then sauté in 1 tablespoon of oil. Add the potatoes and sauté for about 5 minutes, then add the broth. Remove the sausage meat, form it into plum-sized balls, and add it to the potatoes. Simmer on low heat for about 20 minutes, seasoning well with salt and pepper, and perhaps parsley.
