Bourbon Chicken Bites

Ingredients for 4 servings:

  • 500 g chicken
  • 2 tbsp white wine
  • 125 ml soy sauce
  • 100 ml bourbon whiskey
  • 125 g cane sugar
  • 2 garlic cloves
  • ½ tsp ginger powder
  • 1 small onion(s) or shallot
  • 1 tsp chili flakes, if needed

Working time approx. 15 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 1 hour; Total time approx. 7 hours 15 minutes

For the marinade, mix all the ingredients in a bowl. Add the chicken, cut into small pieces, and transfer to a freezer bag. Let it marinate in the refrigerator for a few hours, or preferably overnight. If you like it spicy, add a teaspoon of chili flakes or something similar. Arrange the chicken in a single layer in a large casserole dish or on a baking sheet and bake at 180°C for one hour. Baste the meat with the remaining marinade about every 10 minutes. Remove the chicken from the oven and set aside on a plate. Heat the remaining marinade together with the stock and two tablespoons of white wine in a large pan and simmer for a few minutes. Now add the chicken and heat through. The chicken is ideally served with boiled rice or as appetizers.
