Ingredients for 4 servings:

  • 5 handfuls of mixed mushrooms, e.g. chestnut mushrooms, porcini mushrooms, etc. according to taste
  • 150 ml white wine
  • 50 ml Metaxa
  • 2 large onions
  • 2 bunch spring onions
  • 4 tbsp oil
  • 200 g bacon, diced
  • 2 garlic cloves
  • 2 m.-large zucchini
  • salt and pepper
  • 200 ml cream
  • 1 handful of parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel and dice the onions and garlic, wash the spring onions and slice into small rings. Dice the bacon. Clean the mushrooms, wash the zucchini, and dice both. Heat the oil in a pan, sauté the onions, and then add the bacon and garlic. Add the spring onions, mushrooms, and zucchini to the pan and fry briefly. Deglaze with Metaxa, simmer briefly, and then add the wine. Simmer everything for another 5 minutes, then add the cream. Let stand on low heat for another 5 minutes, season with salt, pepper, and parsley. Goes great with spaetzle!
