Braised chicken breast in porcini mushroom sauce

Ingredients for 4 servings:

  • 20 g porcini mushrooms, dried
  • 4 chicken breast fillets
  • 200 g mushrooms
  • 2 tbsp oil
  • 200 g whipped cream
  • salt and pepper
  • possibly sauce thickener, lighter
  • e.g. parsley
  • ¼ liter of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak the porcini mushrooms in 1/4 liter of water. Wash the chicken breast fillets, pat dry, and rub with salt and pepper. Trim and slice the mushrooms. Heat oil in a pan and sear the meat until well browned. Add the mushrooms and sear briefly. Add the porcini mushrooms and the soaking water and cook over medium heat for about 15 minutes. Chop the parsley. Remove the meat from the pan. Now pour the cream into the meat juices and bring to a boil. Stir in the sauce thickener, if desired, and bring back to a boil. Serve garnished with chopped parsley and parsley leaves. Serve with rice and steamed carrots.
