Ingredients for 4 servings:
- 1 chicken (approx. 1.2-1.5 kg)
- 3 lemons, untreated
- 4 onions
- 3 cloves garlic
- 2 pinches of sambal oelek
- 4 tbsp honey, liquid
- 2 tsp oil, neutral
- 1 bunch parsley, flat
- Salt and pepper, white
- Thyme

ingeniously simple
Cut the chicken into 6-8 pieces, rinse, pat dry, and rub with salt, pepper, and thyme. Quarter the lemons. Peel and roughly chop the onions and garlic. Place the chicken pieces in a baking dish. Arrange the prepared ingredients around the chicken pieces. Roast in a preheated oven at 200°C for 45-50 minutes. Mix the sambal oelek, honey, and oil. After about 30 minutes of cooking time, brush the chicken several times with the mixture and fry until crispy and brown. Roughly chop the parsley and sprinkle over the chicken pieces before serving. Serve with fresh farmhouse bread and salad. A quick tip: I sprinkle more thyme over the chicken pieces after placing them in the baking dish.
