Ingredients for 4 servings:

  • 1 kg onion(s)
  • 150 g butter
  • 3 tbsp sugar
  • 1 pinch of salt
  • 1 pinch(s) of cayenne pepper
  • 1 piri-piri, dried
  • 4 cl sherry

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the butter in a saucepan, stir in the salt, cayenne pepper, crushed piri-piri, and sugar, and let it caramelize slightly. Add the onions and sauté over medium heat for about 10 minutes. Add the sherry and simmer on low heat with the lid on for about 40-50 minutes. It’s a great side dish for grilled meat. The sauce tastes delicious, best dipped in fresh baguette.
