Braised tomatoes

Ingredients for 2 servings:

  • 6 tomatoes, ripe (very firm are not recommended)
  • 1 m.-sized onion(s)
  • 125 g ham, diced
  • 2 eggs
  • Salt
  • some margarine

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the tomatoes into eighths, peel the onion and slice into half rings, and beat the eggs well with a fork in a cup. Heat a little margarine in a pan (important: the pan must have a lid!). Add the half onion rings and the diced ham to the pan and fry lightly. Add the tomatoes, mix well, cover the pan, and let the tomatoes simmer thoroughly, stirring occasionally. Finally, add the beaten eggs, stirring continuously. Season well with salt and pepper. Serve with bread or rice! Sausage can be used instead of ham. If you don’t like the skin on tomatoes, you can also use skinned ones. The preparation time depends on the quantity and firmness of the tomatoes. It looks a bit strange, but tastes absolutely delicious!
