Bratwurst Crispy Pieces
The perfect bratwurst crispy pieces recipe with a picture and simple step-by-step instructions.
Bratwurst crispy sticks:
- 4 (Bratwurst o. Haut) Wollwurst / Puffy
- 1 Egg
- 50 ml Kefir
- 50 ml Seasoned salt from my KB
- 50 ml Garlic pepper from my KB
- 50 ml Spelled flour type 630
- 1 Bun old
- 1 Breadcrumbs
- Oil
Cauliflower / broccoli / kohlrabi:
- 1 smaller Cauliflower fresh
- 1 smaller Broccolini
- 1 Kohlrabi fresh
- 1 Salt
Hollandaise sauce:
- 1 Shallot
- 150 ml White wine dry
- 1 tbsp Vinegar
- 1 tbsp Lemon juice
- 2 Bay leaves
- 1 tsp Peppercorns
- 150 g Butter
- 3 Egg yolks, fresh
- Salt and pepper
- Freshly grated nutmeg
Bratwurst: Set the oven to 50 degrees!
- Halve the sausage, then halve again lengthways! Mix the kefir, egg, seasoned salt and garip pepper in a bowl. Coarsely grate the rolls or use breadcrumbs and place in a bowl. Put flour in a bowl too! Create a breading line one after the other with flour, kefir mixture and then breadcrumbs!
- Flour the sausage first, then pull it through the kefir mixture, then bread it in breadcrumbs! Put aside!
Vegetables:
- Clean the cauliflower and broccoli, cut into florets, rinse with cold water. Peel the kohlrabi and cut into sticks! Then heat salt water and cook cauliflower and kohlrabi for 3 minutes, then another 2 minutes. Add broccoli. Sieve and rinse briefly in cold water! Keep warm in the oven!
Bratwurst:
- Heat the oil in a pan and fry the breaded sausage in it until crispy! Keep warm in the oven! Prepare a side dish as well! With us boiled potatoes.
Hollandaise sauce:
- Bring the white wine, vinegar, spices and bay leaves to the boil and then reduce a little. Sieving. Melt the butter in a pan. Beat the egg yolks in the white wine stock with the residual heat and gradually add the butter. Always stir well. Season to taste with salt, pepper and nutmeg. Possibly add more wine and lemon juice.
- Then add the prepared vegetables to the sauce! Mix everything well!
- Serve everything now! There was also boiled potatoes!
