Ingredients for 4 servings:
- 4 bratwurst, uncooked
- 30 g butter
- 20 g flour
- 0.38 liters of broth (cooking broth from the sausages)
- ⅛ liter sweet cream
- 2 tbsp mustard, medium hot
- salt and pepper
- 2 egg yolks
- 1 pinch(s) of sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Heat 1.5 liters of water with salt. Squeeze out the sausage meat, form it into dumplings, and add it to the boiling water. Let it simmer for about 5 minutes. Heat the butter and add the flour. Then add 3/8 liters of the cooking broth and the cream and let it simmer for 10 minutes. Season with mustard, pepper, and sugar. Whisk the egg yolks together and add them to the sauce to thicken. Do not boil any further. Add the sausage dumplings to the sauce. Serve hot.
