Bratwurst with dried apricots and onions

If you’re grilling this dish, be sure to use a grill pan! Halve the onions, slice them thinly, and fry for 5 minutes until soft. Grill the sausages for 5 minutes until well browned, turning frequently. Cut a hole in the sausages lengthwise to create a pocket. Grill for another 5 minutes with the cut side down, until this side is also browned. Chop the apricots into small pieces and add them to the sausages along with the mustard and onions, and stir. Add the apricot juice to the mixture and stir until the juice completely coats the sausages and begins to thicken. Repeat until all the juice is used up. Serve the sausages cut side up, topped with the onion and apricot mixture.
