Bratwurst with leek and onion sauce

Ingredients for 3 servings:

  • 2 m.-sized onion(s)
  • 1 stalk(s) leek
  • 3 tbsp oil
  • 2 tbsp tomato paste
  • 1 tbsp honey
  • salt and pepper
  • 2 tbsp fruit vinegar
  • 250 ml vegetable stock
  • 1 tbsp oregano
  • 3 sausages (Oberländer Wollwurst or other sausage)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the onions, trim and wash the leeks. Cut both into rings. Heat 2 tablespoons of oil in a pan. Add the onions and leeks and sauté. Add the tomato paste and sauté; it’s fine if it gets a little color. Caramelize with the honey or agave syrup. Pour in the vinegar and vegetable stock and bring to a boil. Let the leek and onion sauce simmer for about 10 minutes. Finally, season with salt, pepper, and oregano. Meanwhile, heat 1 tablespoon of oil in a second pan and fry the sausages. Serve the sausages with the leek and onion sauce. Mashed potatoes go very well with this.
