Ham pasta with egg cream

Ingredients for 2 servings:

  • 250 g pasta, short (e.g. tortiglioni)
  • 150 g cooked ham, thin slices
  • 50 g tomatoes, dried in oil
  • 100 g peas, frozen
  • 4 eggs
  • 4 tbsp whipping cream or milk
  • 2 sprigs of parsley
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 33 minutes

Cook the pasta in boiling salted water for about 10 minutes until al dente. Cut the ham into strips. Drain the tomatoes and roughly dice them. Drain the pasta and let it drain well. Heat the oil in a large pan. Briefly fry the ham. Add the pasta, tomatoes, and peas and fry for 2-3 minutes, stirring occasionally. Whisk the eggs and cream. Season generously with salt and pepper. Pour over the pasta and let it set over low heat for about 5 minutes, stirring occasionally. Wash the parsley, finely chop it, and sprinkle it over the top.
