Bolinhos de Chuva, makes 4 pieces

Whisk together the eggs, sugar, and milk. Add the flour until a smooth, creamy, but not too runny mixture forms. Heat the oil in a deep frying pan. Scoop the batter with a tablespoon, drop it into the hot oil, and fry over low heat, keeping the doughnuts slightly raw inside. Drain the doughnuts on absorbent paper and sprinkle with a sugar-cinnamon mixture while still warm.
