Ingredients for 4 servings:

  • 2.2 kg flour (rye/wheat flour)
  • 1 kg low-fat curd cheese
  • 2 cubes of yeast
  • 2 packs of sourdough
  • 1.2 liters of lukewarm water
  • 120 g sesame seeds
  • 120 g flaxseed
  • 80 g caraway powder
  • Cardamom powder and coriander powder as desired
  • 40 g salt, approx.

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 3 hours 5 minutes

Make a pre-dough from 200 g flour, 200 ml warm water, and 2 cubes of yeast and let it rise in a warm place for about 30 minutes. In the meantime, grind/blend the sesame and flaxseed and add them to the mixing bowl with the remaining ingredients, except for the water. Then add the pre-dough and gradually add the remaining warm water, spices, and salt, and mix everything into a smooth dough. Divide the dough between four loaf tins and brush with water. Let it rise for about 1 hour. Bake at about 220 °C (top/bottom heat) for 15 minutes, then bake at 180 °C for a further 40 minutes. Turn off the oven, brush the bread with water again, and leave in the oven for another 5 minutes. Then remove from the tins and let cool on a rack.
