Poor Knights in a different way
First, cut the bread into thick strips. Chop the tomato, onion, and garlic as finely as possible (e.g., using a hand blender). Then, crack the eggs into a deep plate or bowl, add the milk, tomato, onion, and garlic, and stir well. Dip the bread strips into the mixture, applying a little pressure, so they absorb the liquid and any onion and tomato pieces stick to them. Finally, coat the soaked bread strips in breadcrumbs and add them to a (preheated) pan filled with oil and fry over medium heat. Turn occasionally until all sides are golden brown or perhaps a little darker. The time required varies depending on the thickness of the bread strips. The bread bites will now be nice and crispy on the outside and a little moister on the inside. The consistency is very reminiscent of meatballs. Of course, you can vary the spices used, the type of bread, the degree of browning, or the milk to suit your taste. I recommend a yogurt dip for serving. To do this, simply mix some yogurt with salt and, if desired, pieces of vegetables, corn, garden herbs or tuna.
