Bread soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 200 g bread(s) (gray bread, approx. 4 slices), stale
  • 3 tbsp butter
  • ½ liter meat broth or vegetable broth, hot
  • Salt
  • pepper
  • ½ bunch chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely dice the onion and garlic. Cut the bread into approximately 1 cm cubes. Chop the chives into small rolls. Melt 1 tablespoon of butter in a pan, add the onion and garlic, and sweat until translucent, then remove from the heat. Melt the remaining butter in another pot, add the bread cubes, and brown well on all sides. Then add the onion and garlic. Pour the hot broth into the pot with the bread cubes. Season with salt and pepper to taste, but only let it simmer for a short time. Divide the soup among bowls and serve sprinkled with chives. Tip: Add the bread cubes to the broth just before serving, as they swell very quickly. If desired, place them in a preheated bowl so that everyone can add as many bread cubes to their broth as they like at the table.
