- 4 chop(s) (lobster or stick chops)
- Salt and pepper, black from the mill
- n. B. Flour
- 2 medium-sized eggs, whisked
- e.g. breadcrumbs
- 50 g clarified butter for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 24 minutes
Season the chops with salt and pepper. Divide the flour, eggs, and breadcrumbs between 3 shallow plates. Coat the chops first in flour, then in egg, and then in breadcrumbs. Heat the fat in a large frying pan and fry the chops over medium heat for 5-7 minutes per side until golden brown.
