- 2 Feta
- 1 Egg
- Breadcrumbs
- 2 Red Peppers
- 5 Tomatoes
- 1 Onion
- 1 bunch Spring onions
- Oil
- Salt
- Pepper
- Hot paprika powder
- Dried oregano
- Dried thyme
- Dried basil
Instructions
- Clean the peppers and cut into cubes, cut the spring onions into rings, peel and dice the onions and cook everything together in oil, add the tomatoes to the remaining vegetables, season everything with salt, pepper, paprika and the dried herbs and finish cooking.
- Mix the egg in a deep plate, put the breadcrumbs in another plate and turn the feta first in the egg and then in the breadcrumbs and fry briefly in the hot oil.
- Serve the tomato and pepper vegetables with a dollop of fresh goat cheese, the fried feta and warm, crispy ciabatta.
