Breaded veal steaks Swiss style

Ingredients for 4 servings:

  • 4 veal escalopes, tender, or veal steaks
  • 4 slices of cheese (Lindenberger, Emmental or Appenzeller)
  • some margarine or vegetable cream
  • 4 slice(s) pineapple from the can, well drained
  • Breadcrumbs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim any excess fat from the veal, carefully flatten it, wash it briefly, and turn it in the breadcrumbs so that all sides are well coated. Heat the vegetable cream in a pan until very hot, then add the meat and sear it on all sides until not quite golden brown. Remove the meat from the pan, top each with a slice of pineapple and cover with a slice of cheese. Reduce the heat to low and return the meat to the pan. Cover and return the dish to the heat for a few minutes until the cheese is nicely melted. Serve hot! Serve with: homemade fries, vegetable or potato gratin, and croquettes. Be sure to serve with a mixed green salad with vinaigrette!
