Roasted celery

Ingredients for 2 servings:

  • 1 small celeriac
  • Salt
  • ½ lemon(s), juice
  • 2 egg yolks
  • some cream
  • pepper
  • nutmeg
  • 200 g Parmesan, grated
  • Clarified butter or vegetable oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Peel the celery and cut into approximately 1 cm thick slices. Add lemon juice and salt to water and blanch the celery for about 5 minutes. Then rinse and drain. Whisk the egg yolk and cream. Season with salt, pepper, and nutmeg. Dip the celery in the egg cream, roll in Parmesan cheese, and fry in plenty of fat until golden brown. Drain on a kitchen towel.
