Ingredients for 4 servings:

  • 3 m.-large zucchini
  • 2 eggs
  • 1 cup flour
  • 1 cup breadcrumbs
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fast and tasty

Wash the zucchini, dry it, and cut it into 0.5 cm thick slices. Crack the eggs and whisk them with salt and pepper. Place the breadcrumbs and flour into separate plates. Coat the zucchini first in flour, then in the egg, and finally in the breadcrumbs. Then fry in hot oil until golden brown on both sides. This goes very well with tzatziki and grilled food.
