Breakfast eggs with a twist

Ingredients for 6 servings:

  • 4 eggs, size M
  • 150 ml milk or cream
  • 6 slice(s) Black Forest ham or other ham
  • e.g. salt and pepper
  • n. B. Nutmeg
  • 1 bunch of chives, finely chopped
  • Fat for the mold

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

for 6 egg muffins

Preheat the oven to approximately 190°C (top/bottom heat). Mix the eggs with milk, spices, and chives. Grease 6 muffin cups, place a slice of ham in each, and pour in the egg mixture. Bake the muffins in the oven for approximately 20 minutes. We love scrambled eggs with bacon for Sunday breakfast, and every time we have a plate full of egg crumbles in front of us. There has to be a better way, I thought. So here’s the condensed version. The nice thing is: it takes longer in the oven, but that gives you time to set the table nicely or simply snuggle up in bed for a few more minutes, since you don’t have to stir anything.
