Ingredients for 1 servings:

  • 225 g oat flakes
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • e.g. vanilla extract
  • ½ tsp salt
  • 1 pinch of nutmeg
  • 2 bananas, ripe
  • 2 eggs
  • 180 ml milk or plant-based drink
  • possibly fruit, nuts, chocolate pieces

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

In a large bowl, mix together the oats, baking powder, cinnamon, salt, and a pinch of nutmeg. If desired, you can add vanilla extract. In a second bowl, mash the bananas with a fork. Then add the eggs and milk and whisk to combine. Now add the wet ingredients to the dry ingredients and mix everything together. Let the batter rest for 5 minutes so that the oats can absorb some of the milk. In the meantime, preheat the oven to 175°C (top/bottom heat). Divide the batter between 12 muffin cups or a greased muffin tin. At this point, you can vary the muffins to your liking. If desired, you can add fruit (e.g. blueberries), nuts, chocolate shavings, or similar toppings to the muffins. Bake the muffins in the preheated oven for about 20-25 minutes, let them cool slightly, and then remove them from the cups. These muffins are perfect for breakfast, as an afternoon snack, or to take with you. The variety of options means you can always rediscover them, and they’re quick and easy to prepare.
