Ingredients for 1 servings:

  • 200 g salted butter, room temperature
  • 100 g butter, room temperature
  • 250 g sugar
  • 300 g flour
  • 6 egg yolks

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

for a 26cm springform or quiche dish

Line a 26cm springform pan or quiche pan with baking paper or grease it. Preheat the oven to 170°C fan/convection oven. Put the salted and unsalted butter in a mixing bowl, add the sugar, and mix everything with a hand mixer. Add 5 egg yolks, one at a time, to the batter, then stir in the flour. Pour the batter into the springform pan, slightly pulling up the edges and pressing down. Mix one egg yolk with a pinch of salt and a little water and generously brush the cake with it. Use a fork to press a lattice pattern into the batter. Bake in the preheated oven on the middle rack for about 35 to 40 minutes, until golden brown. After baking, let the cake cool in the pan for about 10 minutes and then on a wire rack.
