A quick, vitamin-rich soup that’s delicious and filling. Recipe from Bali, Indonesia.
Mix the ingredients for the pasta dough until smooth and let it rest at room temperature for 15 minutes. Wash the carrot, trim both ends, peel, score lengthwise, and slice or slice crosswise into approximately 3 mm thick slices. To garnish, remove the stems from the peppers, wash them, cut them lengthwise, open them up, remove the pink membranes and all the seeds, and cut them crosswise into thin strands about 2-3 cm from the top. Halve the rest lengthwise and cut the halves diagonally into approximately 5 mm wide pieces. Wash the tomatoes, remove the stems, peel them, quarter them lengthwise, and remove the green core and seeds. Cut the quarters into small pieces. Heat a pan moderately with 1 tablespoon of sunflower oil each, add the dough in portions, and let it set to form the flatbreads. Let the flatbreads (pancakes) cool, roll them up, and cut them crosswise into wide noodles. Divide the pasta among the serving dishes. Heat 2 tablespoons of sunflower oil in a wok until very hot. Add the carrot, green beans, and the pepperoni pieces and stir-fry for 2 minutes. Add the tomato pieces and stir-fry for another 2 minutes. Deglaze with the coconut water. Add the chicken stock, tomato juice, spring roll sauce, and fish sauce. Simmer for 2 minutes and season with salt and freshly ground black pepper. Divide among serving bowls, garnish with sesame seeds and pepperoni threads, serve, and enjoy.
