Ingredients for 4 servings:
- 750 g zucchini
- 500 g potatoes
- 2 large onions
- 4 tbsp olive oil
- 4 tbsp water
- 1 tbsp lemon juice
- salt and pepper

Cut the zucchini and potatoes into approximately 5 mm thick slices, peel the onions and slice them into rings. Combine all ingredients in a large bowl, season well, and bake in a preheated oven at 200°C (180°C fan-assisted oven) for 40-45 minutes. It goes well with briefly pan-fried meat, fish, or meatballs. It’s also perfect for a filling meal without any side dishes.
