Brigitte's fish curry with tomatoes and fruit

Ingredients for 4 servings:

  • 750 g cod fillet(s)
  • 2 lemons
  • Salt
  • n. B. herbs
  • 1 tsp curry powder
  • 1 stalk(s) leek
  • 100 g apples
  • 250 g tomatoes
  • 1 banana(s)
  • 1 tbsp, heaped flour
  • 40 g margarine
  • 250 ml broth or fish stock

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Cut the fish fillets into large cubes. Season with the juice of the squeezed lemons, salt, a little curry powder, and herbs, if desired, and let stand for 10 minutes. Trim and wash the leek and cut into fine rings. Peel and dice the apples, tomatoes, and banana. Pat the fish cubes dry with kitchen paper, coat in flour, and fry in the hot margarine until browned. Remove from the pan, cover, and keep warm. Sauté the fruit and vegetables in the frying fat for five minutes. Season with the remaining curry powder and pour over the broth or stock. Mix in the fish cubes and sauté. Serve with rice. Approx. 320 kcal per serving.
