Brigitte's soy bread

Ingredients for 1 servings:

  • 850 g flour (spelt)
  • 150 g soy flour
  • 2 packets of dry yeast
  • 1 tbsp salt
  • 1 tbsp spice mix (bread spice)
  • 3 tbsp oil (soybean oil)
  • 500 ml soy milk (soy drink)
  • 200 ml water, lukewarm
  • 150 g mixed grains or seeds

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Own creation with three soy products

Combine all dry ingredients, add oil, soy milk, and water, and knead into a smooth dough. Let rise for about 30 minutes. Pour into two loaf pans or form two loaves of bread and let rise, covered, for another 30 minutes. Brush with water and bake in a preheated oven at 200°C for 20 minutes, then reduce the temperature to 180°C and bake for another 40 minutes. Remove the bread from the oven and brush with water again.
