Brioche oven dumplings with apples

Ingredients for 4 servings:

  • 100 ml sweet cream
  • 150 ml milk
  • 3 eggs, size M
  • 75 g sugar
  • 1 tsp, heaped cinnamon
  • 4 slice(s) of brioche rolls from the previous day
  • 2 apples
  • 3 tbsp almond flakes
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

very similar to bread pudding

Peel and core the apples, and cut them into fairly thin slices. Grease an ovenproof baking dish. Whisk together the cream, milk, eggs, sugar, and cinnamon. Layer the brioche bread and apple slices in the greased baking dish and pour the egg mixture over them. Toss them slightly to allow the brioche bread to absorb the mixture. Finally, sprinkle the flaked almonds on top. Bake the oven-baked cake in a preheated oven at 180°C (top/bottom heat) for about 35-40 minutes. Cover halfway through if the surface is starting to get too dark. If necessary, leave it in the oven for about 5 more minutes without power. Serve with vanilla sauce.
