Ingredients for 4 servings:
- 500 g strawberries
- e.g. powdered sugar
- 250 g cream
- 1 vanilla pod(s), pulp
- 250 g mascarpone
- 300 ml wine, sweet
- 175 g ladyfingers
- 125 g raspberries
Instructions
Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes
Puree half of the strawberries with 2 tablespoons of powdered sugar. Halve the remaining strawberries and sprinkle with 2 tablespoons of powdered sugar. Whip the cream until stiff. Split the vanilla pod lengthwise and scrape out the seeds. Mix the mascarpone with 2 tablespoons of wine, the vanilla seeds, and 100g of powdered sugar. Fold in the stiffly whipped cream. Place half of the sponge fingers in a glass dish (20 x 15 cm). Moisten with 150ml of wine. Spread half of the mascarpone mixture over the top. Spread the strawberry puree evenly over the top. Cover with the remaining sponge fingers. Moisten with the rest of the wine and spread the second half of the mascarpone mixture over the top. Arrange the strawberries and raspberries on top. Cover and chill in the refrigerator for at least 2 hours.
